Cold pasta salad with olive oil and garlic recipe


This ​​cold pasta salad with olive oil and garlic recipe is quick, delicious, and easy to make! This recipe uses basic ingredients that can allow you to add some of your favourite foods to create different dishes!

300 g of your favorite pasta. We recommend using spiral-shaped pasta

60 ml La Española Extra Virgin Olive Oil

3 garlic cloves (chopped)

¼ cup fresh basil (chopped)

¼ cup fresh parsley (chopped)

15 ml lemon juice

¼ cup grated parmesan cheese


Cook the pasta. Simply bring a large pot of water to the boil. Once the water is boiling, add the pasta along with a dash of salt and a tablespoon of olive oil.

Depending on the pasta you bought, the cooking time could be from 10-12 minutes.. Drain the pasta once it’ is cooked al dente..

Next, heat 30 ml of olive oil on medium heat in a large skillet.. Add the chopped garlic and cook for 1-2 minutes.

Once the garlic is golden brown, lower the temperature and add the chopped fresh basil and parsley, and cook for another minute on low. Be careful not to over cook the garlic. 

Transfer the cooked pasta to a large bowl and add the cooked ingredients (garlic and herbs) along with the lemon juice and parmesan cheese. Drizzle with olive oil and season with salt and pepper to taste. Mix thoroughly and it’s ready!

*Chef’s tip*

Be sure not to overcook the basil and parsley. Simply warm them gently to release the wonderful flavours of these amazing herbs.
