Toast with Olive Oil, Avocado, Cheese and Chili
If you like your toast with a savoury twist. Avocado and cheese go really well together, but if you add a spicy touch of chilli and a generous amount of olive oil, you'll love this toast

Ingredients
- 2 ripe avocados
- Chilli flakes or ground chilli
- Cheese flakes
- Extra virgin olive oil
- Juice of ½ lime
- Pinch of salt
- Slices of toasted bread
Directions
- Cut one of the ripe avocados in half, remove the stone and mash with a fork. Reserve ½ of the other avocado.
- Add a splash of virgin olive oil, some chilli flakes, a pinch of salt, the juice of ½ lemon and blend until you obtain a firm, smooth cream.
- Cut a couple of slices of bread and toast lightly.
- Spread with the avocado and chilli cream.
- Add the cheese slices, thin slices of the reserved avocado, a little more chilli flakes and a drizzle of extra virgin olive oil.
