Tomato and carrot sauce

This tomato and carrot sauce is not only bursting with nutrients but also versatile enough to complement pasta, rice, or even as a topping for your favorite veggie dishes. Elevate your plant-based culinary experience with this homemade delectable sauce.

Ingredients

4 tomatoes

3 carrots

1 red onion

½ green pepper

Some fresh basil leaves

2 cloves of garlic

Extra virgin olive oil

Salt

Directions

Start by washing the vegetables

Chop the tomatoes, carrots, onion and pepper.

Preheat the oven to 220°C

Place the vegetables in a baking dish: tomatoes, carrots, green pepper, onion and garlic cloves.

Add the fresh basil leaves

Add a generous drizzle of olive oil

Add the salt

Bake for 30 - 35 minutes at 200°C, heat up and down until the vegetables are soft.

Transfer the vegetables to a food processor and puree to desired texture.

Pour into an airtight glass jar.

Ready to store or enjoy
