4 tomatoes
3 carrots
1 red onion
½ green pepper
Some fresh basil leaves
2 cloves of garlic
Extra virgin olive oil

Directions
Start by washing the vegetables
Chop the tomatoes, carrots, onion and pepper.
Preheat the oven to 220°C
Place the vegetables in a baking dish: tomatoes, carrots, green pepper, onion and garlic cloves.
Add the fresh basil leaves
Add a generous drizzle of olive oil
Add the salt
Bake for 30 - 35 minutes at 200°C, heat up and down until the vegetables are soft.
Transfer the vegetables to a food processor and puree to desired texture.
Pour into an airtight glass jar.
