Almond Biscuits

You can never go wrong with homemade biscuits! Try this easy recipe using almonds, a hint of lemon, and La Española Extra Virgin Olive Oil for a healthier biscuit — ready in just 30 minutes.

Ingredients

  • 200 g ground almonds
  • 200 g plain flour
  • 140 g caster sugar
  • 120 ml La Española Extra Virgin Olive Oil
  • 2 medium eggs
  • Zest of 1 orange
  • 1 tsp (5 g) baking powder
  • Pinch of salt

    Preheat the oven to 180°C (160°C fan) / Gas Mark 4

  • 2.

    In a large bowl, combine the ground almonds, flour, sugar, baking powder, and salt.

    Add the eggs, La Española Extra Virgin Olive Oil, and orange zest, then mix until a soft dough forms.

  • 4.

    Shape the dough into small balls (about the size of a walnut) and place them on a lined baking tray, leaving a little space between each one.

  • 5.

    Bake for 12–15 minutes, or until the biscuits are lightly golden in colour.

  • 6.

    Allow to cool before eating.

These almond and orange biscuits are a wonderful Spanish sweet and using olive oil instead of butter makes them not only healthier and a little lighter, but it also adds a little bit of a Mediterranean vibe.
