You can never go wrong with homemade biscuits! Try this easy recipe using almonds, a hint of lemon, and La Española Extra Virgin Olive Oil for a healthier biscuit — ready in just 30 minutes.

Ingredients
- 200 g ground almonds
- 200 g plain flour
- 140 g caster sugar
- 120 ml La Española Extra Virgin Olive Oil
- 2 medium eggs
- Zest of 1 orange
- 1 tsp (5 g) baking powder
- Pinch of salt

Preheat the oven to 180°C (160°C fan) / Gas Mark 4

In a large bowl, combine the ground almonds, flour, sugar, baking powder, and salt.

Add the eggs, La Española Extra Virgin Olive Oil, and orange zest, then mix until a soft dough forms.

Shape the dough into small balls (about the size of a walnut) and place them on a lined baking tray, leaving a little space between each one.

Bake for 12–15 minutes, or until the biscuits are lightly golden in colour.
