Banana bread with dark chocolate

Let's go with a sweet, simple and very practical recipe if you have several ripe bananas lingering in the fruit bowl! The mixture of banana and dark chocolate will do the rest of the magic!

Ingredients
- 3 bananas
- 2 eggs
- Oat flour 100g
- Oat flakes 50g
- Yeast 5g
- Vanilla essence
- Chocolate 85%.
- 1 tbsp of La Española Light in Colour Olive Oil

Preheat the oven at 200º for 30 minutes to speed up the waiting time and let’s get to the dough!

Mash the bananas in a bowl. Tip: choose ripe bananas to make it much easier to mash them.

Add to this mixture 2 egg yolks, a tablespoon of La Española Light in Colour olive oil and a little vanilla essence for extra flavour.

Mix the dry ingredients (flour, oatmeal, baking powder) and add them to the liquid ingredients little by little.

This point is very important (it will define the final texture!): beat the egg whites until stiff (with a mixer, by hand or by machine, as you prefer!) Do not let them flatten because otherwise they are no longer useful.

Add the whipped egg whites to the rest of the previously created mixture very little by little, not all at once.

Once the dough is ready, you can add the ingredients you like (nuts, chocolate chips, cinnamon to taste, etc.).

Coat the mould with olive oil so that it does not stick and is tastier!
To make it clear that it is a banana bread, place two banana halves on top of the dough
