Ingredients
- 3 bananas
- 2 eggs
- Oat flour 100gr
- Oat flakes 50gr
- Yeast 5gr
- Vanilla essence
- Chocolate 85%.
- 1 tbsp of La Española Light in Colour Olive Oil
Directions
- Preheat the oven at 200º for 30 minutes to speed up the waiting time and let's get to the dough!
- Mash the bananas in a bowl. Tip: choose ripe bananas to make it much easier to mash them.
- Add to this mixture 2 egg yolks, a tablespoon of La Española Light in Colour olive oil and a little vanilla essence for extra flavour.
- Mix the dry ingredients (flour, oatmeal, baking powder) and add them to the liquid ingredients little by little.
- This point is very important (it will define the final texture!): beat the egg whites until stiff (with a mixer, by hand or by machine, as you prefer!) Do not let them flatten because otherwise they are no longer useful.
- Add the whipped egg whites to the rest of the previously created mixture very little by little, not all at once.
- Once the dough is ready, you can add the ingredients you like (nuts, chocolate chips, cinnamon to taste, etc.).
- Coat the mold with olive oil so that it does not stick and is tastier!
- To make it clear that it is a banana bread, place two banana halves on top of the dough.
