Dark Chocolate Mousse with Salt

Any dessert with chocolate is well appreciated. If you add a few flakes of salt to enhance the flavour of the chocolate and an excellent olive oil in its preparation, the result is spectacular.

Ingredients
- 2 ripe avocados
- Chilli flakes or ground chilli
- Cheese flakes
- Extra virgin olive oil
- Juice of ½ lime
- Pinch of salt
- Slices of toasted bread

Chop the chocolate and melt in a bain-marie or in the microwave. Leave to cool for 10 minutes.

Add the organic oil to the melted chocolate and mix until well blended.

Add the egg whites and the pinch of salt flakes and beat until stiff. Set aside

Beat the egg yolks with the sugar until doubled in volume.

Gradually pour the chocolate and oil mixture into the beaten egg yolks. Mix thoroughly.
Gradually fold the whipped egg whites into the mixture. -

Pour the mousse into individual ramekins and refrigerate for at least 3 hours.

Serve with a touch of whipped cream and lemon zest.
