Grilled Vegetables with Truffle Oil
By using truffled olive oil, you will enhance the flavour of seasonal vegetables, giving an exceptional touch to a simple grilled dish.

Ingredients
- 2 aubergines
- 1 bunch of green asparagus
- 1 red and green pepper
- Cherry tomatoes
- Extra Virgin Olive Oil with White Truffle
- Salt
Directions
- Thinly slice the aubergines, soak in salted water for 30 minutes to remove the bitterness. Dry very well before grilling.
- Cut the cherry tomatoes crosswise.
- Cut the pepper into slices
- Cut the stalk off the green asparagus
- Add truffled olive oil to the grill
- When the grill is hot, cook the vegetables in batches, aubergines, cherry tomatoes, asparagus, red and green pepper. Turn to cook on both sides.
- Serve with a pinch of salt and a little truffle olive oil.
