Vegan Paella
Vegan's couldn't try Spanish traditional paella... until know! We've made this staple of Spanish cuisine vegan-friendly. Are you going yo try it?

Ingredients
- ½ g saffron
- 800 ml hot vegetable stock
- 4 tbsp La Española Olive Oil
- 1 aubergine, cut into 3 cm pieces
- 2 red peppers, deseeded and cut into 2 cm pieces
- 1 onion, cut into 2cms pieces
- 5 artichokes form a can, halved
- 200 g runner beans, cut into 4 cm pieces
- 3 cloves garlic, finely chopped
- 1 large tomato, grated
- 1 tsp salt
- 1 tsp sweet paprika
- 250 g Spanish paella rice
- 2 sprigs of rosemary
