  • ½ g saffron
  • 800 ml hot vegetable stock
  • 4 tbsp La Española Olive Oil
  • 1 aubergine, cut into 3 cm pieces
  • 2 red peppers, deseeded and cut into 2 cm pieces
  • 1 onion, cut into 2cms pieces
  • 5 artichokes form a can, halved
  • 200 g runner beans, cut into 4 cm pieces
  • 3 cloves garlic, finely chopped
  • 1 large tomato, grated
  • 1 tsp salt
  • 1 tsp sweet paprika​​​​​​​
  • 250 g Spanish paella rice
  • 2 sprigs of rosemary
