That’s right, somehow (despite our best efforts!) Summer has almost passed and it’s nearly Autumn! 

Unless you’re reading this in the future, you can simply bookmark this page and be ahead of the curve for next Autumn!

But for those of you reading this at the time of writing, don’t worry - we are here to help you gracefully transition from Boys of Summer to California Dreamin’ as all those leaves turn golden brown and awesome autumnal vibes spread across the land.

Autumn is an obvious time to rethink your recipe game. Not only do the changing temperatures impact our appetites, but those late-blooming seasonal fruits and vegetables really come into their own to define the dishes at this time of year. Add into the mix a few treat-heavy celebrations, like Halloween, and there’s plenty to look forward to on the foodie’s calendar! 

But we’re not here to tell you how best to use your pumpkin seeds or your foraged blackberries, we have something different in mind - an authentic taste of Spain to make your ‘fall’ rise to the occasion

Listed below are four of our favourite Spanish recipes to roll out at this time of year, primed to impress and satisfy any situation! Bursting with gold hues, from bright yellow to bold reds, these recipes mirror the changing seasons perfectly, but also bring a welcome warmth to any family table.

1. Lentil, chorizo and vegetable stew

As the days grow shorter and the nights grow colder, it's inevitable that we see this recipe skyrocket in popularity. In fact, our Lentil, chorizo and vegetable stew is becoming something of a fan-favourite among La Española followers, and we’ve seen some incredible renditions over the years. 

Whatever your take on this delicious dish, we believe the trick is to serve with a generous drizzle of fruity La Española Extra Virgin Olive Oil alongside a hefty chunk of crusty bread for a simple yet deliciously comforting meal.

2. Spanish butternut squash pizza

Proudly presenting golden orange and red tones, this signature dish reminds us of walking through a perfect Autumn-kissed forest floor. Topped with creamy, caramelised butternut squash, red onion, roasted red pepper and salty manchego cheese, this Spanish pizza is a delicious vegetarian midweek meal. Bringing the seasonal root veg into the recipe is a perfect finish to an autumnal theme.

3. Croquetas

We have only one word to define this dish, but only one is needed. Surprise your guests with a spinach and cheese croquetas tapa. These bitesize beauties may be small but they’re beautifully crunchy, full of flavour and trust us when we say...so, so moreish! 

For the making, our olive oil of choice here is the incredibly versatile La Española Light in Colour Olive Oil, perfectly suited for optimum performance at high temperatures. 4. Truffle tortilla

What do we think of our tortilla? At the risk of sounding dramatic, this might just be the most incredible tortilla recipe on the internet. Tortilla de patatas is one of the most popular Spanish dishes, so you can bet that we have high standards for such a signature dish. But to take it to the next level, we’ve given it a twist to this traditional dish by adding a splash of La Española truffle flavoured extra virgin olive oil. Try it, you won’t regret it!
